Cooking oils are derived either from animal fat, as butter, lard, and other types, or plant oils from the olive, maize, sunflower and many other species. Oils are also used for flavoring and for modifying the texture of foods. Although fats generally have a bad reputation, good fats are essential for a healthy diet. 

The bad fats, saturated and trans fats, tend to be more solid at room temperature (like a stick of butter), while monounsaturated and polyunsaturated fats tend to be more liquid (like liquid vegetable oil).

Oils are used for much more than just cooking; they're also used in cosmetics, fuel, painting, and lubrication.
